ALPIPAN _ Our pride and joy is our gluten-free sourdough starter! The practice of making a starter is as old as bread itself. People have been mixing flour and water for more than 5,000 years, waiting for the mixture to ferment; when it was acidic and full of gas, it was used as a yeast to make the dough rise. They discovered that they could reproduce their yeast by setting aside some unused dough for use as a ‘starter’ for subsequent breadmaking. Today at Alpipan we take more or less the same approach, but with the help of modern technology. To standardise our products, we use a state-of-the-art fermentation plant that allows us to produce
over two tonnes of gluten-free sourdough starter per day using a fully automated process that requires 12 hours of constant temperature and pH control to ensure that the starter meets our standards. We constantly feed our gluten-free sourdough starter to ensure that we can continue to produce delicious gluten-free bread on a daily basis. The live lactic cultures selected by Alpipan and the long fermentation process enable us to make gluten-free bread with an unmistakable flavour, aroma and texture, all of which remain throughout the product’s shelf life.
