ALPIPAN _ was founded to exclusively focus on the production of bakery products aimed at consumers who are obliged to follow a special daily diet that excludes gluten, milk, lactose or protein due to specific intolerances, allergies or metabolic disorders. Located in Altopascio, in the province of Lucca, it manufactures its gluten-free products in two dedicated factories, meeting the needs of numerous private labels that distribute its products in the main European and American markets. Alpipan is part of the Bauli Group, owner of the Bauli, Doria, Motta and Bistefani brands, which has 6 production plants, employs over 1,600 people worldwide and distributes its products in over 70 countries.

The Research and Development (R&D) department is the driving force behind Alpipan. Technologists and product designers are constantly developing new products and researching the most innovative production technologies for gluten-free and low-protein bakery products. The constant collaboration with our customers’ R&D departments allows us to continually develop new formulations that meet the needs of consumers with highly varied expectations in terms of taste and packaging, depending on the geographical target market. In the last 5 years Alpipan has gradually eliminated allergens from its recipes so that it can offer its customers products with short and clean labels that respond to the new nutritional market trends and which any consumer can purchase with just a click thanks to the numerous available apps.
